I hadn't run into this before, so I did my own test on this and I see what you mean:
I followed up with Engineering as to whether it was intentional, and it was. When we implemented the date/time selector, not all of the mobile systems UI controls could accommodate seconds, so to keep things consistent between platforms we kept it to the minute level.
There is no plan to see if there are newer controls that can now handle seconds, but you can ask your Customer Success Manager to put in Product Feedback on your behalf. If we get enough feedback it is something we could possibly address in the future, but at the moment there isn't enough interest from our customers to make it a priority.

Is there any way to capture the seconds as well? If not, do you have plans to implement that in the future? I am trying to capture time down to the granular level to save into my MS SQL database. The only limitation is that the current field type only captures to the minute.
